Lentils Vinaigrette

Ingredients

  • 2 ½ teaspoons salt
  • ½ cup chopped fresh parsley
  • 2 carrots, chopped
  • ¼ teaspoon fresh-ground black pepper
  • 2 ribs celery, chopped
  • 1 red onion, chopped
  • 4 tablespoons wine vinegar
  • + 5 more ingredients
    • 7 tablespoons olive or other oil, such as peanut
    • ¼ pound mixed salad greens (about 2 quarts)
    • 1 cup sliced almonds
    • 1 ½ cups lentils
    • 1 quart water

1. Put the lentils in a medium saucepan with the water and 1/2 teaspoon of the salt. Bring to a boil.
