Lentils with Smoked Sausage and Carrots
Ingredients
- 1 bay leaf
- 3 tablespoons chopped fresh parsley
- 1 pound smoked sausage, cut diagonally into 3/4-inch slices
- 1 teaspoon dried thyme
- 1 ¼ teaspoons salt
- 2 tablespoons cooking oil
- 1 onion, chopped

- 3 carrots, halved lengthwise and cut crosswise into 3/4-inch pieces
- 1 pound lentils (about 2 1/3 cups)
- 1 quart water
