Ingredients

  • 1-½ teaspoons molasses
  • Melted butter
  • Cornmeal
  • ¼ cup shortening
  • 2-¼ cups water
  • ½ teaspoon fennel seed or aniseed, crushed
  • 2 teaspoons salt

    • 1 tablespoon grated orange peel
    • 2 packages (¼ ounce each) active dry yeast
    • 1/3 cup packed brown sugar
    • 2-½ cups rye flour
    • 4 to 4-½ cups all-purpose flour

1. In a large bowl, combine 2 cups all-purpose flour, rye flour, brown sugar, yeast, orange peel, salt and fennel seed. In a saucepan, heat the water, shortening and molasses to 120°-130°.
