  • 2 tablespoons lime juice
  • 3 large sweet potatoes, peeled and cubed
  • 3 tablespoons honey
  • ½ teaspoon lime rind
  • 2 tablespoons olive oil

Combine potatoes and olive oil, and spread in an aluminum foil-lined jellyroll pan. Bake at 350° for 20 minutes. Combine honey, lime juice, and lime rind. Pour over potatoes; gently toss. Bake 20 more minutes. Serve warm.
