Limpa Bread

Ingredients

• 3 tablespoons powdered buttermilk
• 2 teaspoons gluten flour
• 2 teaspoons active dry yeast
• 1 ½ cups bread flour
• 1 ½ cups rye flour
• ¼ teaspoon baking soda
• 1 tablespoon orange zest
• + 7 more ingredients
• • 2 ¼ tablespoons molasses
  • 2 ¼ tablespoons butter
  • ¼ cup cracked wheat
  • 1 teaspoon caraway seed
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seed
  • 1 ¹/₃ cups boiling water

1. Combine fennel seeds, cumin seeds, caraway seeds, cracked wheat, butter or margarine, molasses or barley malt, and orange zest in 1 1/3 cup of boiling water. Soak for 1 hour.
