  • 170g (¾ cup) smooth peanut butter
  • 140g (1 stick + 2 tablespoons) unsalted butter, softened
  • 110g (½ cup) unrefined cane sugar
  • 90g (½ cup) soft brown sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 170g (1 1/3 cups + 1 tablespoon) buckwheat flour
  • + 2 more ingredients
    • ½ teaspoon baking powder
    • ½ teaspoon salt + extra for sprinkling

Mix together the peanut butter, ordinary butter and sugar in a large bowl until smooth. You can use an electric whisk/stand mixer but I just used my trusty wooden spoon.
