Machuquillo (Plantain Mash)

Ingredients

  • ½ teaspoon salt
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 2 medium plantains, peeled and thinly sliced

Cook plantain slices in boiling water for 15 minutes or until tender; drain. Place plantains, oil, salt, and garlic in a bowl; mash with a potato masher until smooth. Serve immediately.
