Mackerel Salad and Mustard Balsamic Dressing


  • 3 tablespoon(s) balsamic vinegar

  • ½ cup(s) olive oil
  • 2 pound(s) mackerel fillets, cooked
  • 10 ounce(s) spinach leaves, washed and torn into bite size pieces

    • head of romaine lettuce, washed and torn into bite size pieces
    • 4 to 6 roma tomatoes, sliced thin
    • 1 cucumber, peeled and sliced thin
    • ½ cup(s) flavored feta cheese, crumbled
    • salt to taste
