  • ¼ teaspoon salt
  • About ¼ cup all-purpose flour
  • ½ teaspoon ground cinnamon or mace
  • About ½ cup sugar
  • 3 pounds firm-ripe apricots, peaches, or plums
  • 1 tablespoon lemon juice
