Mango Lassi Breakfast Parfait


  • 2 tablespoons chopped roasted pistachios (optional)

  • 2 medjool dates, pitted
  • ½ cup water
  • ½ cup raw unsalted cashews
  • 2 medium mango, peeled

    • For the Mango Lassi:
    • pinch of salt
    • 1 tablespoon pure maple syrup
    • 1/3 cup white chia seeds
    • 2 cups vanilla flavoured almond milk
    • For the Chia Seeds:
