Mango-Lime Icebox Pie

Ingredients

  • Filling:
  • ¼ cup water
  • 1 cup mango nectar
  • 2 large eggs
  • 2 ½ tablespoons butter
  • ½ cup sugar
  • Crust:
  • + 10 more ingredients
    • ¾ cup sugar
    • Grated lime rind (optional)
    • ¼ cup fresh orange juice
    • 1/8 teaspoon salt
    • ¼ cup cornstarch
    • 1 (9-inch) Piecrust or 1/2 (15-ounce) package refrigerated pie dough (such as Pillsbury)
    • Meringue:
    • 2 teaspoons grated lime rind
    • 3 large egg whites
    • ½ cup fresh lime juice (about 4 limes)

Prepare and bake Piecrust in a 9-inch pie plate. Cool completely on a wire rack. To prepare filling, combine nectar and next 5 ingredients (nectar through eggs) in a large saucepan, stirring with a whisk. Bring to a boil over medium heat, stirring constantly.
