Mango Macadamia Nut Rice

Ingredients

  • 2 T olive oil
  • ½ c macadamia nuts
  • 10 whole black peppercorns
  • 2 whole cloves
  • 2 cardamom pods
  • 1 (1-inch) piece cinnamon stick
  • 1 lb basmati rice
  • + 6 more ingredients
    • ½ t saffron, soaked in 1 tablespoon hot water
    • 1 t kosher salt
    • 1 ½ c water
    • 1 medium ripe mango, peeled, pitted and diced
    • ¼ c golden raisins
    • 2 T sliced green onion
