Maple-Bacon Bread Pudding Recipe

Ingredients

  • 1 pound thick-cut bacon
  • Unsalted butter, for greasing
  • 17 large eggs
  • 1 cup crème fraîche
  • ¾ cup sugar
  • 1 vanilla bean, split and seeds scraped
  • 1 teaspoon kosher salt

    • 3 ¾ cups half-and-half
    • ¾ cup pure maple syrup, plus more for serving
    • 1 ½ pounds brioche (3 small loaves), crusts discarded and loaves sliced 1 inch thick (see Note)
