Maple-Bacon Marshmallows

Ingredients

  • 4 ½ teaspoons unflavored powdered gelatin
  • ½ cup cold water
  • 2/3 cup sugar
  • ½ cup Grade A dark or Grade B maple syrup*
  • ¼ cup light corn syrup
  • ¼ cup water
  • ¼ teaspoon salt

    • 1/8 teaspoon ground cinnamon
    • ½ cup (about 1 ½ ounces) finely chopped candied bacon**
