Maple-Brandy Glaze for Cornish Game Hens

Ingredients

  • 3 Tbs. pure maple syrup
  • ¼ cup Calvados, applejack, or other brandy
  • ½ tsp. ground allspice
  • ½ tsp. ground nutmeg
  • 1-½ cups apple juice
  • 2 Tbs. unsalted butter
  • 1 Tbs. molasses

In a small saucepan, boil the apple juice until reduced to 1/2 cup. Add the remaining ingredients and return to a boil. Reduce to a simmer and cook until reduced to 3/4 cup, about 3 min.
