Maple Horseradish Glazed Beets

  • 2 ½ tablespoons maple syrup (preferably dark amber or Grade B)
  • 1 ¾ pounds medium beets
  • ½ teaspoon salt
  • 2 ½ tablespoons cider vinegar
  • ¼ teaspoon black pepper
  • 3 tablespoons bottled horseradish
  • ¼ cup unsalted butter

Put oven rack in middle position and preheat oven to 400°F. Wrap beets in foil and roast until tender, about 1 hour.
