Ingredients

  • 1/8 teaspoon salt
  • 2/3 cup pecans
  • 1 ¼ cups all-purpose flour
  • 8 3 1/2-inch fluted round tartlet pans
  • ¼ cup water
  • 6 tablespoons unsalted butter
  • 1 4 1/2-inch round cookie cutter

    • 1 ½ tablespoons cider vinegar
    • 1 pastry or bench scraper
    • 6 tablespoons light brown sugar
    • unsweetened whipped cream
    • 1 teaspoon sugar
    • ¼ teaspoon salt
    • pie weights or raw rice
    • 2 large eggs
    • 3 tablespoons granulated maple sugar
    • ½ cup unsalted butter
    • ½ cup dark amber or Grade B maple syrup

Blend together flour, sugar, butter, and salt in a bowl with your fingertips or a pastry blender until mixture resembles coarse meal with some small (roughly pea-size) butter lumps.
