Marian's Savory Vegetable Bread Pudding

Ingredients

  • 2 teaspoons Dijon mustard
  • 1 ½ cups freshly grated Parmesan cheese, divided
  • 6 large eggs
  • 1 (8-oz.) package sliced fresh mushrooms
  • 1 cup milk
  • 3 cups cubed ciabatta bread (about 1-inch cubes)
  • 2 tablespoons olive oil

    • 1 red bell pepper, chopped
    • 1 bunch Swiss chard (about 1 lb.)
