Ingredients

  • 4 large, thick slices of crusty bread
  • 3 to 4 Tbs. extra-virgin olive oil
  • 1 Tbs. finely chopped rosemary
  • ¼ cup grated Parmesan cheese
  • 2 pints cherry tomatoes, preferably mixed colors
  • Salt and freshly ground black pepper
  • 2 scallions (white part only), chopped coarse
  • + 6 more ingredients
    • 3 Tbs. balsamic vinegar
    • 1/3 cup extra-virgin olive oil
    • 4 slices provolone cheese, 1-½ oz. each
    • ¼ cup finely chopped parsley
    • 3 cloves garlic, minced

For the tomatoes-In a shallow bowl, mix the tomatoes, scallions, parsley, rosemary, garlic, olive oil, and vinegar. Season with salt and pepper.
