Marinated Heirloom Tomatoes with Mustard and Dill

Ingredients

  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons Dijon mustard
  • 2 pounds large heirloom tomatoes, cut into 1/4-inch-thick slices
  • ¼ teaspoon salt
  • 2 teaspoons grated lemon rind
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon fresh lemon juice

Combine the first 6 ingredients in a large bowl. Add tomato slices, tossing gently to coat. Let stand 15 minutes.
