Marinated Olives and Manchego

Ingredients

  • 1 cup manzanilla olives, rinsed
  • 1 teaspoon crushed red pepper
  • 1 cup diced manchego cheese
  • ½ teaspoon dried thyme
  • 1 teaspoon coarsely ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 1/3 cup extra-virgin olive oil
  • + 2 more ingredients
    • 1 teaspoon minced lemon rind
    • 1 cup kalamata olives, rinsed

Toss ingredients together gently. Let stand in glass jar 1 day.
