Marinated Vegetable Salad 13

Ingredients

  • 3 stalk(s) celery, sliced
  • 1 can(s) French style green beans, drained (14 ½ ounce can)
  • ¾ cup(s) cider vinegar
  • 1 green bell pepper, chopped (medium)
  • 1 onion, chopped (or 4-6 green onions) (medium)
  • 1 can(s) sweet peas, drained (15 ounce can)
  • 1 can(s) white shoe peg corn, drained (11 ounce can)
  • + 5 more ingredients
    • 1 jar(s) sliced pimentos, undrained (7 ounce jar)
    • ½ teaspoon(s) salt
    • ½ teaspoon(s) black pepper
    • ¼ cup(s) splenda or sugar
    • ½ cup(s) canola oil (or you can use Italian dressing)

Bring first 3 ingredient to a boil until the splenda/sugar melts. Layer vegetables in 9x13 casserole dish. Pour the boiled ingredients over vegetables. I use Italian dressing sometimes. This is very good. It is a good Weight Watchers dish if you are dieting. Cover and refrigerate for 8 hours.
