Marscarpone and Peanut Butter Stuffed Medjool Dates


  • 1 lb fresh Medjool dates
  • 1 (8-ounce) package cream cheese or mascarpone cheese, softened
  • ½ c peanut butter
  • Assorted nuts, minced

Split one side of dates lengthwise and remove pits. Arrange dates on a serving plate. Stuff half with cheese and the other half with peanut butter. Garnish with minced nuts. Recipe courtesy of Bard Valley Natural Delights.
