Ingredients

  • 4 large egg whites
  • ½ teaspoon unflavored gelatin
  • 1 teaspoon vanilla extract
  • ½ cup sugar
  • 1 tablespoon sugar
  • 9 tablespoons water
  • 5 ounces bittersweet (not unsweetened) or semisweet chocolate

    • ¼ cup cornstarch
    • 1/3 cup light corn syrup
    • 1 tablespoon unsweetened cocoa powder
    • 4 large egg yolks
    • 1 ½ cups all purpose flour
    • 1/8 teaspoon salt
    • ½ cup whipping cream
    • 1 teaspoon vanilla extract
    • ¼ cup solid vegetable shortening
    • 3 tablespoons water
    • ¼ teaspoon salt
    • 1 tablespoon unsalted butter
    • 5 tablespoons unsalted butter
    • 2 cups whole milk
    • 1 cup sugar
    • Chocolate shavings

Combine flour, butter, vegetable shortening, sugar and salt in processor. Using on/off turns, blend until mixture resembles coarse meal.
