Ingredients

  • 2 tablespoons all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons instant espresso powder
  • ¼ teaspoon salt
  • About 9 ounces chocolate wafer cookies, broken into ½-inch pieces
  • ½ cup melted butter (1/4 lb.)
  • 1 pound mascarpone or cream cheese
  • + 4 more ingredients
    • 1/3 cup honey
    • 1 teaspoon vanilla
    • 2 cups strawberries (14 oz.)
    • 2 large eggs

1. Preheat oven to 325° (300° if using convection heat). Place cookies in a 1-quart zip-lock plastic bag and seal. With a rolling pin, crush cookies into fine crumbs.
