  • ¼ cup roasted garlic (see note)
  • 2 cups heavy cream
  • ¼ cup sherry vinegar
  • 1 ½ cups thinly sliced red onions
  • 2 tablespoons vegetable oil
  • Salt and freshly ground black pepper
  • 1 ½ pounds red-skinned potatoes

    • 1 ½ pounds boniato (tropical sweet potato)
