Mashed Boniato with Onions (Pure de Boniatos con Cebollas)
Ingredients
- ¼ cup roasted garlic (see note)
- 2 cups heavy cream
- ¼ cup sherry vinegar
- 1 ½ cups thinly sliced red onions
- 2 tablespoons vegetable oil
- Salt and freshly ground black pepper
- 1 ½ pounds red-skinned potatoes
