Mashed Potatoes with Caramelized Shallots

  • 2 cups thinly sliced shallots
  • Freshly ground black pepper
  • 8 oz. (1 cup) unsalted butter, melted
  • ½ cup whole milk, heated; more as needed
  • 1 cup crème fraîche, at room temperature
  • 4 lb. Yukon Gold potatoes, peeled and cut into 2-inch chunks
  • 2 Tbs. extra-virgin olive oil
  • + 1 more ingredients
    • Kosher salt

Heat the oil in a 12-inch skillet over medium heat. Reduce to medium low and add the shallots and 1/2 tsp. salt.
