Ingredients

  • ¼ teaspoon freshly ground black pepper
  • ¼ cup extra-virgin olive oil
  • 3 tablespoons unsalted butter
  • 2 sprigs fresh thyme
  • 1 pound small shallots
  • 1 large heavy skillet with lid
