  • 3 pounds Yukon Gold potatoes
  • ½ cup whole milk
  • 1 large heavy skillet with lid
  • 3 tablespoons unsalted butter
  • ¼ cup extra-virgin olive oil
  • ¼ teaspoon kosher salt
