  • A filling recipe: use Shallots & Bacon with Sun-Dried Tomatoes, Red Bell Peppers with Thyme & Goat Cheese, or Ham, Mushrooms & Chives
  • Butter or oil for the pan
  • ½ tsp. kosher salt
  • ¼ cup cornstarch
  • 2 large egg yolks
  • 2 large eggs
  • Pinch cayenne
  • + 2 more ingredients
    • 1 cup heavy cream
    • 1-¼ cups whole milk

Position a rack in the top third of the oven and heat the oven to 425°F.
