Matafans with Fresh Herbs, Sour Cream & Bacon

  • ¼ cup unsalted butter, melted; plus another-¼-cup for the pan
  • ½ cup sour cream
  • 1 cup buttermilk
  • 6 slices crisp cooked bacon, crumbled
  • 6 large eggs, separated
  • 4-½ oz. (1 cup) all-purpose flour
  • ½ tsp. table salt
  • + 2 more ingredients
    • 2 Tbs. mixed chopped fresh herbs, such as flat-leaf parsley, chives, chervil, or tarragon; more for garnish, if you like
    • ¼ cup heavy cream

In a small bowl, whisk together the sour cream and heavy cream. Refrigerate. Put the flour in a bowl. Make a well in the center and add the egg yolks.
