Matafans with Fresh Herbs, Sour Cream & Bacon
Ingredients
- ½ tsp. table salt
- 1 cup buttermilk
- 6 large eggs, separated
- 4-½ oz. (1 cup) all-purpose flour
- ½ cup sour cream
- ¼ cup heavy cream
- 6 slices crisp cooked bacon, crumbled
- + 2 more ingredients

- ¼ cup unsalted butter, melted; plus another-¼-cup for the pan
- 2 Tbs. mixed chopped fresh herbs, such as flat-leaf parsley, chives, chervil, or tarragon; more for garnish, if you like
In a small bowl, whisk together the sour cream and heavy cream. Refrigerate. Put the flour in a bowl. Make a well in the center and add the egg yolks. Break them up and gradually whisk them in, along with the buttermilk, just until combined (there will still be a few small lumps); don’t overwhis...
