Meatloaf with Tomato Soup Topping


  • 1 ½ lb ground chuck
  • 1 (10-ounce) can condensed tomato soup
  • 1 c old-fashioned oatmeal
  • ½ c chopped onion
  • 1 egg
  • 1 t salt
  • ½ t black pepper
  • + 2 more ingredients
    • 1 lb small red-skin potatoes, cut into halves
    • ½ lb carrots, peeled and cut into 1 1/2-inch pieces

Preheat oven to 350F. Combine meat, 1/2 can soup, oatmeal, onion, egg, salt and pepper in a large bowl. Mix well. Form into a large loaf, about 2 1/2 inches high. Place in a large casserole dish. Place potatoes and carrots around loaf. Spread remaining soup on top of meatloaf. Bake about 1 hou...
