Mediterranean Goat-Cheese Sandwiches

  • 1 cup trimmed arugula or fresh spinach
  • 1 (8-ounce) loaf French bread
  • 6 basil leaves, thinly sliced
  • 4 (1/8-inch-thick) slices tomato
  • 1/8 teaspoon freshly ground pepper
  • 1 tablespoon olive paste (such as Oliva da Sanremo)
  • 4 (1/8-inch-thick) slices red onion, separated into rings
  • + 4 more ingredients
    • ½ teaspoon chopped capers
    • ½ teaspoon olive oil
    • 1 teaspoon balsamic vinegar
    • 2 ounces goat cheese

Slice the loaf in half lengthwise. Spread the goat cheese evenly over cut side of bottom half of loaf, and spread the olive paste evenly over goat cheese.
