Mediterranean Pasta Salad

Ingredients

  • 4 anchovy fillets
  • ¾ cup olive oil
  • 1 teaspoon salt
  • 1/3 cup loosely packed fresh flat-leaf parsley
  • 2 garlic cloves
  • ½ teaspoon dry mustard
  • 1/3 cup balsamic vinegar
  • + 3 more ingredients
    • 1 tablespoon fresh lemon juice
    • 1 (16-ounce) box linguine
    • ¼ teaspoon pepper

Process first 9 ingredients in a food processor until smooth, stopping to scrape down sides. Cover vinaigrette, and chill 2 hours.

Cook pasta according to package directions. Rinse with cold water; drain. Toss cooked pasta with vinaigrette.
