Mediterranean Rice Salad with Seared Tuna

Ingredients

  • 1 teaspoon dried thyme
  • 1 ½ teaspoons salt
  • 1/3 cup plus 1 tablespoon olive oil
  • 1 small red onion, chopped
  • 1 ½ teaspoons Dijon mustard
  • 4 tuna steaks, about 1/2 inch thick (1 1/2 pounds in all)
  • 1 ½ cups long-grain rice
  • + 7 more ingredients
    • 1 clove garlic, minced
    • 3 tablespoons white-wine vinegar
    • 3 tablespoons chopped flat-leaf parsley
    • 1 large tomato, seeded and cut into 1/2-inch dice
    • ½ cup black olives, such as Kalamata, halved and pitted
    • ¾ teaspoon fresh-ground black pepper
    • 1 red bell pepper, seeds and ribs removed, cut into 1/2-inch dice

1. In a large pot of boiling, salted water, cook the rice until just done, about 10 minutes. Drain. Rinse with cold water. Drain thoroughly. 2.
