Ingredients

  • 7 cups vertically sliced onion
  • ¼ cup extra-virgin olive oil, divided
  • 1 ¼ cups long-grain rice
  • 1 ¼ cups lentils
  • 4 ½ cups water
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Heat 3 tablespoons oil in a large skillet over medium-low heat. Add onion; cover and cook 15 minutes or until soft, stirring occasionally.
