Melon, Serrano Ham, and Arugula Salad

  • ¼ cup (1 ounce) shaved Manchego cheese
  • 3 tablespoons sherry vinegar
  • 1 teaspoon molasses
  • ¼ teaspoon ground cumin
  • 8 cups loosely packed trimmed arugula
  • ¼ teaspoon freshly ground black pepper
  • 1 garlic clove, minced
  • + 4 more ingredients
    • 3 ounces serrano ham, trimmed and cut into 1/4-inch pieces
    • ¼ teaspoon salt
    • 1 teaspoon canola oil
    • 6 cups cubed peeled cantaloupe (about 1 3-pound melon)

Combine first 7 ingredients in a large bowl, stirring well with a whisk. Add cantaloupe and ham; toss gently to coat. Arrange arugula in an even layer on a serving platter. Top with cantaloupe mixture; sprinkle evenly with cheese. Serve immediately.
