Mesclun Salad with Cucumber and Feta

Ingredients

• 1 teaspoon extravirgin olive oil
• ¹/₃ cup thinly sliced peeled English cucumber
• 1 tablespoon rice vinegar
• 6 cups gourmet salad greens
• 2 tablespoons crumbled feta cheese
• 2 tablespoons tomato juice
• 2 tablespoons thinly sliced green onions
• + 5 more ingredients
• • ¼ teaspoon salt
  • ½ teaspoon sugar
  • ¹/₈ teaspoon freshly ground black pepper

To prepare dressing, combine first 6 ingredients in a small bowl, stirring with a whisk.To prepare salad, combine the salad greens and remaining ingredients in a large bowl. Drizzle dressing over salad, tossing gently to coat.
