Mexican Tea Cakes


  • 1 teaspoon vanilla
  • 2 ¼ cups all-purpose flour
  • 3 cups confectioners sugar
  • 2 cups unsalted butter
  • ¾ teaspoon salt
  • ¾ cup very finely chopped pecans

Beat together butter and 1/2 cup confectioners sugar in a large bowl with an electric mixer at moderately high speed until pale and fluffy, about 4 minutes.
