Milk-Chocolate Pecan Lace Cookie Sandwiches

  • 2 oz. pecans (to yield ½ cup ground pecans)
  • 1-½ oz. (1/3 cup) all-purpose flour
  • 4 oz. milk chocolate, chopped
  • 2 Tbs. light corn syrup
  • 1/3 cup granualted sugar
  • 1 tsp. pure vanilla extract
  • Pinch salt
  • + 2 more ingredients
    • ½ cup coarsely chopped pecans
    • 2 oz. (4 Tbs.) unsalted butter

Position racks in the middle and upper third of the oven. Heat the oven to 350°F. Line two baking sheets with nonstick liners, like Silpat brand, or with parchment.
