Mini Black-Bottom Cheesecakes Recipe


  • 24 plain chocolate wafer cookies, preferably Nabisco
  • 2 teaspoons pure vanilla extract
  • ¼ cup seedless raspberry preserves, warmed
  • Vegetable oil spray
  • 3 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, at room temperature
  • ¼ cup sugar
  • + 2 more ingredients
