  • 1 mini-muffin pan with 12 (1/8-cup) muffin cups, preferably nonstick
  • 1 teaspoon confectioners' sugar
  • 3 tablespoons light brown sugar
  • ¼ teaspoon baking soda
  • Vegetable oil cooking spray
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon vanilla extract

    • ¼ cup unsweetened Dutch-process cocoa powder
    • 1/3 cup water
    • 1 ounce fine-quality bittersweet chocolate
    • 1 large egg
    • 1/3 cup pitted dates
