Ingredients

  • 3 cups vegetable oil
  • lime or mango pickle
  • 2 teaspoons brown sugar
  • ½ teaspoon salt
  • 2 teaspoons fresh lime juice
  • 1 cup fresh cilantro sprigs
  • 2 jalapeño chiles
  • + 4 more ingredients
    • 1 deep-fat thermometer
    • ½ mini pappadams
    • 2 tablespoons water
    • 3 tablespoons plain yogurt (preferably whole-milk)

Heat oil in a 2-quart heavy saucepan over moderate heat until it registers 350°F on deep-fat thermometer.
