Mini Ricotta Cheesecakes with Berries

Ingredients

  • 1-2 tablespoons honey
  • 1 cup raspberries
  • 1 cup blueberries
  • 1 cup blackberries
  • Berry Compote:
  • Cooking spray
  • 2 teaspoon pure vanilla extract

    • 1 whole egg
    • 3 egg whites
    • 1 to 2 cup maple syrup
    • 1 to 2 cup plain 2% Greek-style yogurt or plain yogurt
    • 1 cup (8 ounces) light cream cheese
    • 2 cup part-skim ricotta cheese
