Mini Vanilla Bean Strawberry Layer Cakes

Ingredients

  • 4 strawberries, sliced
  • splash of milk
  • 1 teaspoon vanilla bean paste (or extract)
  • 1 ½ cups powdered sugar
  • ¾ cups butter, softened (1 ½ sticks)
  • For frosting*:
  • 1 ¼ cup whole milk
  • + 7 more ingredients
    • 1 teaspoon salt
    • 2 ½ teaspoons baking powder
    • 2 ¼ cups all-purpose flour
    • 3 teaspoons vanilla extract (or a combo of extract, vanilla bean paste or vanilla bean)
    • 3 eggs, room temperature
    • 12 tablespoons butter, softened
    • 1 ½ cup white sugar

Preheat oven to 350 degrees F (175 degrees C). Grease a jelly-roll pan with butter. (or spray.) Set aside. In a medium bowl, cream together the sugar and butter.
