Mint Couscous with Zucchini and Tomato

  • 1 chopped medium tomato (1 cup)
  • ½ cup golden raisins
  • 1/3 cup chopped fresh mint
  • 1 ½ cups uncooked plain instant couscous
  • 3 tablespoons olive oil
  • 1 medium zucchini (halved lengthwise and thinly sliced, 2 cups)
  • 1 tablespoon lemon juice
  • + 1 more ingredients
    • 1 teaspoon kosher salt

Place instant couscous in a large bowl and add 2 cups boiling water. Cover with plastic wrap and set aside for 5 minutes. Uncover and fluff with a fork. Add lemon juice, kosher salt, olive oil, zucchini, tomato, fresh mint, raisins. Toss until well combined.
