  • ¼ cup butter or margarine, softened
  • 2 (8-rib) lamb rib roasts (1 1/2 pounds each), trimmed
  • 2 garlic cloves, minced

    • ½ teaspoon pepper
    • 1 teaspoon salt
    • ¼ cup chopped fresh parsley

Sprinkle lamb with salt and pepper. Cook lamb in a large nonstick skillet over medium-high heat 3 to 4 minutes on each side or until browned.
