Mississippi Beauregard Yam Pie

Ingredients

  • 2 prepared pie shells, unbaked
  • 4 ounce(s) butter, softened
  • 2 cup(s) cooked and mashed Beauregard yams
  • 2 cup(s) granulated sugar
  • 1 can(s) plus 2 T) evaporated milk (can ounces ½ cup can) (small can)
  • 1 ½ teaspoon(s) Vanilla
  • ½ teaspoon(s) ground cardamom
  • + 2 more ingredients
    • 3 eggs, beaten
    • 1 ½ teaspoon(s) cinnamon

Mix butter, yams, sugar and evaporated milk until well blended. Add vanilla, eggs, cardamom, and cinnamon; mix well. Pour into the prepared pie shells. Bake in a 350° oven for about 1 hour until set. Makes 2 pies.
