Ingredients

  • 1 can(s) black-eyed peas, drained and rinsed (15 ounce can)
  • 1 can(s) black beans, drained and rinsed (15 ounce can)
  • 1 can(s) whole kernel corn, drained (15 ounce can)
  • 2 tomatoes, seeded and diced (large)
  • ½ cup(s) extra-virgin olive oil
  • ½ cup(s) vinegar
  • 1 onion, diced (medium)
  • + 7 more ingredients
    • 1 green bell pepper, diced (medium)
    • 3 tablespoon(s) minced garlic
    • ½ bunch(s) cilantro, chopped (½ cup)
    • 1 jalapeno pepper, seeded and finely chopped
    • 1 tablespoon(s) fresh lime juice
    • 1 tablespoon(s) Italian Seasoning
    • 1 package(s) dry Italian dressing mix (7 ounce pkg)

Combine first 11 ingredients (peas thru seasoning)in a large bowl. Stir well. Combine dressing mix, oil and vinegar. Pour over pea mixture. Stir well. Chill at least 2 hours. Serve with tortilla chips. Makes about 8 cups.
