MISSISSIPPI CORNBREAD

Ingredients

  • Chopped onions (optional)
  • ¼ cup(s) vegetable oil
  • 2 eggs, lightly beaten (large)
  • 1 can(s) creamed yellow corn (8 ounce can)
  • 1 cup(s) buttermilk
  • ¼ teaspoon(s) baking soda
  • ½ cup(s) self-rising flour
  • + 1 more ingredients
    • 1 cup(s) self-rising cornmeal

Combine dry ingredients, add wet ingredients and mix just until combined. Pour into greased 8 inch square pan OR muffin pan. Bake at 400° until golden brown - about 30 minutes.
