Mississippi Delta Tamales

Ingredients

  • Filling:
  • 6 to 8 lb boneless meat (pork shoulder, chuck roast or chicken)
  • ¾ c vegetable oil
  • ¼ c chili powder
  • 2 T paprika
  • 2 T salt
  • 2 t black pepper
  • + 11 more ingredients
    • 1 t ground cayenne pepper
    • 1 T garlic powder
    • 1 t ground cumin
    • Corn husks
    • Corn Meal Dough:
    • 8 c yellow corn meal or masa mix (available in most grocery stores)
    • 4 t baking powder
    • 2 t salt
    • 1 2/3 c lard or vegetable shortening
    • 6 to 8 c warm meat broth (from cooking the meat)
    • 1 T onion powder
